Summer is around the corner and we’ve been hibernating all winter. It’s time to get healthy! These cookies are the perfect answer to any sweet tooth craving, you will be addicted. Not only are they delicious, but they are super easy to make and great for on the go snacks. Who doesn’t love healthy peanut butter cookies? You are going to love this easy peanut butter cookie recipe!
We made these on a rainy Wednesday in February while Nikki’s baby screamed (he wants undivided attention at all times- any advice welcome). But then we handed him an ice cream scoop and all you could hear was the grumbling of our stomachs in anticipation of these tasty treats.
This recipe is from one of our favorite groups that we’ve been following for years @toneitup. They believe in women empowering women to love themselves, mind, body, and spirit. For the recipe, you will need sea salt, your favorite natural peanut butter (we love Smuckers), honey, vanilla, or almond extract (we prefer almond for a sassy kick), and dark chocolate chips.
Step 1- Preheat oven to 350 degrees. Now put the peanut butter in a bowl and mix until soft. Add beaten egg, honey, baking powder, almond (or vanilla) extract, and salt, mix well.
Step 2- Fold in chocolate chips to peanut butter mixture. Use a teaspoon to measure dough and drop it onto a pre-greased (can also use parchment paper) cookie sheet. Next bake for 10-12 minutes or until golden. The cookies should still be soft and will harden upon cooling.
The recipe makes 12-15 cookies.
Side Note: You can use almond butter in place of peanut butter, they are super yummy either way!
